Nigisti, whose name means "queen," learned to make Tej as a small child in northern Ethiopia by watching her grandmothers. She now makes the rich drink with her daughters in Denver, Colorado, where they immigrated 28 years ago. All of her products are organic and true to the recipe of her mothers' mothers.
